Sesame Oil Chicken

Ingredients :

Boneless Chicken Thigh - 4 pieces (Skin optional)

Garlic - 3 cloves

Ginger - ±100g

Rice/ShaoXing Wine - 200ml

Sesame Oil - 6 tbsp

Black Soy Sauce - 4 tbsp

Hot water - 300ml

Marination :

Light Soy Sauce - 2 tbsp

Sesame Oil - 2 tbsp

Salt and Pepper - 1 pinch

Steps :

  1. Remove chicken skin (optional)
  2. Cut the chicken thigh into bite size
  3. Place the chicken in a large bowl, adding in light soy sauce, sesame oil, salt and pepper and mix evenly before wrapping the bowl in a plastic cling wrapper
  4. Chop and dice the garlic and ginger
  5. Heat up the wok and add 4 tbsp of sesame oil, spread the oil evenly across the wok 
  6. Add the diced ginger in to the wok first, stir fry it until its lightly golden brown before adding in the diced garlic
  7. Empty the bowl of chicken into the wok and stir fry it 
  8. Add in the dark soy sauce and stir fry till its evenly spread out 
  9. Pour the hot water along the edge of the wok and then pour in rice/shaoxing wine and stir evenly. 
  10. Let it simmer over medium heat for 5 minutes
  11. Ready to serve!
